A few days ago I was hungry for a mid-afternoon snack (or as my mom calls it a “pick-me-upper”). I had a craving for something sweet so I walked (Who am I kidding? I full-on charged!) into my kitchen to see what I could whip together. I’m happy to report that this snack took me less than 60 seconds to make (AND consume) and it completely satisfied my sweet tooth.
After years of secretly judging my friend for not liking avocados she’s finally come to her senses 😈 . In celebration of her new found “tolerance” of this nutritious fruit I felt inspired to share my homemade guacamole recipe.

When I accidentally go too long between eating I get a fierce hunger (and by fierce hunger I mean I turn into a huge B…. and by B I mean BRAT… 😜). Once I’ve reached this point I am no longer in control of my actions (or words) and will eat anything that is within my grasp regardless (or “irregardless” if you’re one of THOSE people) of whether or not what I’m eating (or saying) is health promoting. I like treats just as much as the next guy (or gal). However, the lack of nutrients, inclusion of artificial ingredients, and empty calories in many sweet treats leaves me feeling less than my best. That’s why when I experiment with new recipes they have to meet two very important criteria: 1) they have to satisfy my sweet tooth (obviously!), and 2) they must provide my cells with the nutrients they need to thrive. In other words, I try to attain a high ratio of nutrients per calorie consumed (if you’re interested to know more about this concept I’ve added an explanation at the bottom of this post). If you haven’t already guessed, I have issues….. One of my (many) issues is an intolerance to dairy products. For years I continued to eat dairy regularly and live with the consequences of my decision, but in 2015 I decided it wasn’t worth the constant belly aches. Rather than give up the foods I loved, I took it as a challenge to find new dishes that I love just as much if not MORE than their dairy alternatives. As an added bonus these new recipes are more nutrient dense than the foods I used to indulge in AND I experience no ill digestive side effects. As long as I can remember, I’ve loved the cold creamy texture of ice cream. As a kid, I preferred hand dipped peppermint ice cream. Then as an adult my tastes changed and I found myself gravitating towards butter pecan, java chip, and the decadent appeal of vanilla ice cream with chunks of cherry and chocolate (just thinking about these flavors makes my mouth water). For Valentine’s Day we decided to enjoy a low key evening at home. No commercialized cards or obligatory chocolates. No overpriced flowers or jam-packed restaurants. Just us (and the dog). It was nice, really.
Seeing as how Valentine’s Day is a celebration of relationships, we decided to celebrate a very special relationship in our lives. One that neither of us could live without (literally). A relationship that many people take for granted, or even abuse. This relationship is so important to our well-being that each day it has the ability to build us up and make us stronger or, depending on our life decisions, it can also tear us down and make us weak.
I’ve been playing around with tropical smoothie recipes for awhile and they always seem to come out bitter. How can that be when each individual ingredient is naturally sweet?!? Truth be told, making smoothie recipes that taste good SOUNDS easy, but getting the perfect blend of sweet and savory has its challenges. After talking it over with a friend, it was suggested that I add a natural sweetener like honey to counter the bitterness. Excited to see if honey was the missing ingredient I hurried home and tried this addition. Although the honey did improve the taste (slightly), something about the flavor of the honey did not pair well with the rest of the smoothie ingredients. Then, today I was watching YouTube and the video blogger added medjool dates to his smoothie in place of a traditional sweetener (Eureka! Something I hadn’t considered. I mean, who doesn’t love a good date?!?). I rushed to my pantry and retrieved a bag of medjool dates. What happened next was something I can only describe as magical. I placed the dates in my smoothie and (voila!) it was the PERFECT blend of tropical goodness. As an added bonus, dates are an excellent source of potassium :). Today I’m sharing my favorite chocolate icing recipe (technically it’s my mom’s recipe, but she’s not writing this post, so…….). This recipe is excellent as an icing for chocolate cake; however, it is To-Die-For when used as a dip with strawberries and bananas, or simply licked off a spoon, finger (when no one is watching), or plate (all those years my mom told me to “clean my plate” are finally paying off!). On occasion I’ve even been known to dab some on my balls (if you’re confused and offended about why I would do this, follow the link to my previous post for clarification).
- 1/2 cup Coconut Milk (be sure to mix can thoroughly)
- 1/2 cup Butter
- 3 cups Powdered Sugar (sifted)
- 1/2 cup Unsweetened Cocoa Powder
- 3 tsp Vanilla Extract
- Optional: pinch of cinnamon or nuts
